Before, During, After

Yes, it was delicious. Yes, we have a lot of leftovers. Feel free to share your fave turkey leftover recipes!

We have so much leftover turkey too, I made this last night to thumbs up by my husband and 2 of the 3 kids.
Turkey & Gnocchi Soup

1/3 c. olive oil
2 cloves garlic, minced
1 lb. chicken, cut into bite-sized pieces**
1/3 c. flour
1/2 c. shredded carrots**
1 stick celery, chopped
1/2 c. fresh chopped spinach
2 & 1/2 c. milk
1 & 1/2 c. heavy cream
3 chicken bullion cubes
salt & pepper to taste
17 oz. pre-made gnocchi**


•On medium heat, cook chicken and garlic in a large pot in olive oil until cooked through.
•Stir in flour and mix well until the flour is cooked into the chicken
•Add the rest of the ingredients except for the gnocchi.
•Cover and simmer for 10 minutes, stirring occasionally.
•Add gnocchi; cook for 3-4 more minutes till cooked through.

That last pic is the money shot -- looks delicious. I was just starting to feel like I was done with turkey forever until I saw that one. Yum.

Great job, Liz! I knew you'd do it, no problem.

I haven't made it yet, because we've spent all day canning apples, but I wanted to do a pasta casserole with turkey, broccoli and a cheese sauce. Miss Chef made pot pies at her folks' home where she spent the holiday, and a friend of mine recommended just heating it up w/bottled bbq sauce and serving up bbq sammidges. She said her kids loved it.

So, not recipes, but some ideas. We don't often use actual recipes around here. ;)

So glad you had a good holiday and dinner turned out well.

I've never seen anyone roast their turkey upside down before. Does your family have some secret recipe that calls for that? Or does it roast better that way? Just curious....
