Bacon Wrapped Corn on the Cob

I had never heard of such a thing.  I'm pretty classic when it comes to corn on the cob- just grill it or microwave it and have plenty of butter and salt.  I do enjoy "mexican" corn on the cob, too.  Grill the corn and then smear it with mayo, cotija cheese, and sprinkle on cayenne pepper and finish with a squirt of lime juice.

On Friday, a co-worker shared a picture on his phone of part of their dinner the night before.  Corn on the cob, with bacon wrapped around it.

Um... YUM!

I immediately dashed to Google to find all the information about grilling corn on the cob with bacon wrapped around it.


You just take a cob of corn, shucked, and wrap uncooked bacon around the cob.  Then wrap it up and place it on the grill for about 20 minutes.  The video lady is kind of annoying but you can see what I'm talking about. And she also does a Brie Corn and that looks OMGOOD!!!!

Some recipes suggested seasoning with a little cayenne pepper before grilling.

Corn on the cob is a definite summer requirement.  For me, I usually get my corn fix at the Indiana State Fair.  To be honest, I can't believe no one has done this bacon wrapped corn at the Fair!  There is a big competition for the Signature Fair Food and when they had the Year of Corn or the Year of Indiana Pork, seems this would have been a perfect offering.

Sounds sort of interesting; might have to give that a try, though I'm usually not all that big on combining foods. I also saw a recipe on pinterest for bacon-wrapped green beans that I've been meaning to make. I think hubby might like both of these things.

Ummmm doesn't most everything taste better with bacon? Uhhhh duh... :-)
